Pork and Chicken Adobo

Adobo is yet another one of the most popular dishes in the Philippines! The perfect balance of vinegar, soy sauce and lots of garlic in this recipe is what makes this dish so tasty and flavorful. Try it out below!

Ingredients:

  • 1/2 lb chicken breast
  • 1/2 lb pork belly
  • 1/4 cup coconut vinegar
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 1 tsp whole black pepper, crushed
  • 1 head of garlic, crushed
  • 5 bay leaves
  • 2 tbsp oil

Directions:

  • In a heated pot, add the oil and saute garlic, black pepper and bay leaves.
  • Add the pork and chicken. Saute for 3 to 4 minutes.
  • Add the soy sauce, vinegar, and water. Cover and simmer for 30 minutes.
  • In a separate saute pan, add the oil and fry the pork and chicken until golden brown.
  • Bring the pork and chicken back to the pot and simmer for another 10 minutes.
  • Stir and season with salt and pepper if necessary.
  • Serve with warm steamed rice.

Note:

Frying the meat gives you that golden brown color and extra flavor, but you can skip it if you prefer. Pork belly is available on any asian store, but if you can’t find it, you can replace it with pork shoulder just like what I used here in this recipe.
