If you like sweet, tangy salads, then this one’s for you! I used fuji apples in the dressing to bring out the natural sweetness. This dressing is best with spinach or iceberg lettuce, because the mild and crisp texture of those leafy greens won’t overpower the dressing.
Ingredients
- 1 head of iceberg lettuce
- 1 fuji apple, sliced thinly
- 1/2 cup toasted pecan
- 1/2 cup dried cranberries
- 1/4 cup feta cheese (optional)
Dressing:
- 1/2 cup olive oil (not extra virgin)
- 1/3 cup apple cider vinegar
- 1/2 c apple juice concentrated juice
- 1 small sized fuji apple, peeled and cored
- 1 shallot chopped or 1 tbsp onion powder
- 1 tsp sasame oil
- 2 tbsp sugar
- 1 tbsp poppy seeds
- 1 tsp salt
- 3/4 tsp xanthan gum
- 1/4 cup water
Directions:
- Mix in a blender all the dressing ingredients until smooth and creamy. Transfer in a clean mason jar.
- Wash and chopped the lettuce and toss it with some of the dressing.
- Top it with dried cranberries, nuts and sliced apple.
Note:
You can substitute canola or safflower oil if you don’t want to use olive oil.
