These pancakes are so light and fluffy, you can probably even eat them plain! My kids love to drizzle maple syrup and spread butter on theirs, but whenever we have these on Sunday morning, I want to make it special for them. To do that, I make this special blueberry sauce that pairs perfectly with the pancakes.
Ingredients:
- 3 cups all purpose flour
- 1/4 cup sugar
- 3 tsp baking powder
- 1 tsp baking soda
- 3 cups buttermilk
- 3 eggs, room temperature
- 1/4 cup (4 tbsp) butter, melted
- 1 tsp vanilla
- 1/4 cup butter
Directions:
- In a bowl, add the flour, sugar, baking powder and baking soda. Mix to combine.
- In a separate bowl, add the buttermilk, eggs, melted butter, and vanilla and stir until combined.
- Mix the dry ingredients with wet ingredients and whisk until smooth. Don’t overmix.
- In a heated pan or griddle, add 1 tbsp of butter. When butter has melted, use the smallest measuring cup ( 1/4 cup) to scoop your batter onto the griddle. Brown on both sides.
- Serve while warm. Enjoy!
Note:
You can substitute milk if you don’t have buttermilk.
