Cassava Cake

Cassava cake is one of the first deasert I learned to make! With only five ingredients you can make a dessert! I served this to my friend Lorae, she liked it so much we became BFFs!

Ingredients

  • 1 pkg (14 oz) grated cassava (available in Asian store)
  • 1 (14 oz)can coconut milk
  • 1 (14 oz) can condensed milk
  • 1 egg
  • 1/4 cup macapuno strings (optional)

Directions

  • Preheat the oven to 350 degrees F.
  • In a bowl, mix together the coconut milk and condensed milk. Set aside half a cup of the mixture for toppings.
  • In another bowl, mix the grated cassava, egg, and the macapuno strings.
  • Combine the cassava into the coconut mixture and mix until no more lumps.
  • Transfer into an oven proof dish and bake for 45 minutes to an hour.
  • Remove the pan from the oven and pour the coconut mixture on top.
  • Switch the oven to broil and bake until the top is golden brown. Make sure you watch it closely as it can burn fast.
  • Let cool before serving.
  • Serve with a cup of tea. Yum!

Note:

You can get grated cassava in the freezer section in any Asian store.
