Chicken Adobo with Pineapple Juice and Star Anise

There’s a special twist to this classic Filipino dish. The addition of pineapple adds a hint of sweetness and the star anise just makes this dish even more flavorful and aromatic! Try it out!

Ingredients:

  • 2 lbs chicken legs
  • 1 head garlic, peeled and crushed
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 star anise
  • 1 tbsp brown sugar
  • 1 tsp ground black pepper
  • 1 cup pineapple tidbits
  • Bay leaves

Directions:

  1. In a heated pot, add oil and garlic, and saute until the garlic is light brown.
  2. Add the chicken legs and saute until the chicken is no longer pink.
  3. Add the rest of the ingredients. Simmer for 45 minutes or until the chicken is tender. Turn the chicken once to promote uniform browning.
  4. Serve over a bed of steamed rice. Enjoy!

Note:

If you want a darker color in chicken you can use dark vinegar sold in any asian store.
