There’s a special twist to this classic Filipino dish. The addition of pineapple adds a hint of sweetness and the star anise just makes this dish even more flavorful and aromatic! Try it out!
Ingredients:
- 2 lbs chicken legs
- 1 head garlic, peeled and crushed
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 star anise
- 1 tbsp brown sugar
- 1 tsp ground black pepper
- 1 cup pineapple tidbits
- Bay leaves
Directions:
- In a heated pot, add oil and garlic, and saute until the garlic is light brown.
- Add the chicken legs and saute until the chicken is no longer pink.
- Add the rest of the ingredients. Simmer for 45 minutes or until the chicken is tender. Turn the chicken once to promote uniform browning.
- Serve over a bed of steamed rice. Enjoy!
Note:
If you want a darker color in chicken you can use dark vinegar sold in any asian store.
