Chicken Afritada is a Filipino dish similar to beef stew. The chicken is slowly cooked after sauteing with garlic and onions then simmered with vegetables until tender. My mom used to add pineapple chunks when she made this but I decided to add dried apricot for a change, and the result was amazing! Sweet, savory and a little bit spicy, it’s just delicious!
Ingredients:
- 2 lbs chicken breast and boneless thighs, cut into bite sized pieces
- 1 head of garlic
- 1 medium sized yellow onion, cut into chunks
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 medium sized carrots, cut into small chunks
- 2 medium sized potatoes, cut into cubes (any kind)
- 1 red bell pepper, cut into chunks
- 3/4 cup dried apricot (about 12 pcs)
- 2 tsp chicken base or 1 cube of chicken bouillon
- 1/2 tsp ground black pepper
- Bay leaves
- Sprigs of rosemary (optional)
Directions:
- In a heated pot, add oil and saute the garlic and onions until soft.
- Add the chicken and continue sauteing for a few more minutes until the chicken is no longer pink.
- Add the soy sauce and pineapple juice and stir.
- Add the carrots, potatoes, bell pepper, and apricot. Stir.
- Add the chicken base, pepper, black pepper, and rosemary. Mix until combined.
- Simmer until the chicken is tender.
- Serve with warm rice. Yum!
Note:
If dried apricot is not available, you can use pineapple chunks instead. Either way is delicious!
