Chicken Salad

The chicken salad made with this recipe is really good with croissants, as shown in the picture, but sourdough will also work just fine! I just love the combination of the buttery croissant and moist chicken salad, try it and I think you will agree!

Ingredients:

  • 16 oz chicken breast
  • 3/4 cup mayonnnaise
  • 2 tbsp pickle relish
  • 1/4 cup Lady’s Choice Chicken or Tuna spread
  • 4 oz seedlesss grapes, quartered
  • 2 pcs celery, chopped
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp pepper

Directions:

  • In a pot, place the chicken breast, salt, pepper and bay leaves.
  • Add 3 cups of water and bring to a simmer. Cook the chicken about 30 minutes. Let it cool.
  • Mix mayonnaise, relish, chicken spread, lemon juice, salt and pepper in a bowl.
  • Chopped the cooked chicken breast into bite-sized pieces.
  • Add the chicken, grapes, and celery nto the mayonnaise mixture.
  • Toppped with slivered almonds.
  • Refrigerate until ready to use.

Note:

You can get Lady’s Choice in any asian market or some local grocery store. If ypu can’t find it just add 1/4 cup more mayonnaise to the recipe.
