Chili Fries with Pickled Jalapeno

It’s almost summer, and you’re out of ideas for that tailgate party you want to throw. Are you needing something inexpensive yet delicious to make for your guests, or even just something quick for dinner? If juicy chili sauce, creamy melted cheese, sweet and spicy jalapeno and tangy ranch dressing, all on some fries, sound good to you, then get cooking with the recipe below!

Ingredients:

  • 2 lbs russet potatoes, peeled
  • Vegetable oil, for deep frying
  • Ranch powder

For the Chili Sauce:

  • 1 lb ground beef
  • 5 cloves of garlic, grated
  • 1 medium-sized yellow onions, grated
  • 1 tbsp cumin powder
  • 2 tsp coriander
  • 1 tbsp paprika
  • 2 tsp turmeric powder
  • 1 tsp cayenne pepper
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1/4 cup tomato paste or 1/2 c tomato sauce
  • 3 tbsp corn meal
  • 1 packet mazola tomato bouillon or 1 tsp chicken flavor
  • 1 1/2 cup water
  • 1 tsp salt
  • 1/2 tsp pepper

For the Cheese:

  • 1 cup Velveeta cheese, cut into cubes
  • 1/3 cup whole milk
  • 1/4 tsp white pepper
  • 1 tbsp ranch dressing powder

Directions:

  • Rinse and peel the potatoes and cut them into sticks (french fry cut).
  • Place in a large bowl and rinse again. Drain the potatoes in a colander and dry with paper towel.
  • Deep fry the potatoes in batches until cooked through.
  • Place in a bowl lined with paper towel to absorb the excess oil. Set aside.

Make the Chili Sauce:

  • In a saute pan, add a tablespoon of oil and saute the garlic and onion until translucent.
  • Add the ground beef and saute for another 5 minutes.
  • Add the cumin, coriander, paprika, turmeric, cayenne pepper, cider vinegar, Worcestershire, and saute for a few minutes.
  • Add the tomato sauce, ketchup, cornmeal, tomato bouillon, and water.
  • Stir and simmer for an hour.
  • Season with salt and pepper if needed.

To Make the Cheese Sauce:

  • In a pot, bring the milk to a simmer.
  • Add the cheese, ranch dressing powder and pepper.
  • Whisk until the cheese has melted and is well combined.
  • Keep warm.

Assemble:

  • Place the potatoes on a serving plate. Add chili sauce on top.
  • Pour the cheese sauce on top.
  • Serve with sweet pickled jalapeno. Yummy!
