A great source of calcium and antioxidants, this recipe is great morning fuel for those folks who try to watch what they eat! The crunch from the granola and the creaminess of yogurt and the fresh berries really make it so much easier to eat healthy; no more excuses!
Ingredients
- 2 cups whole milk greek yogurt (I use Fage)
- 1/4 cup half and half
- 1/4 cup whole milk
- handful of berries (blackberries, raspberries, blueberries, strawberries)
- Granola
- cinnamon
- Maple syrup
Granola:
- 5 cups old fashioned oatmeal
- 1/2 cup honey
- 1/2 cup coconut oil
- 1/4 cup maple syrup
- 2 tbsp molasses
- 1/4 cup brown sugar
- 1 tsp vanilla
- 1 cup walnut
- 1 cup slivered almonds
- 1 cup pecan
- 1 cup of unsweetened dried coconut flakes
- 1/2 cup pepita seed
- 1/2 cup dried cranberries
Directions
- Preheat the oven to 300 degrees F.
- In a bowl, toss together the oats, walnuts, almonds, pecan, pepita seeds, coconut flakes, and cranberries.
- In another bowl, mix honey, coconut oil, maple syrup, molasses, and vanilla. Add this to the oat mixture. Toss well.
- Bake for an hour or until golden brown. Make sure you check it at least every 20 minutes. If the edges are browning too fast take it out and mix.
- Combine together the yogurt with milk and half and half. Mix until smooth and no more lumps. You can use handheld beater or just simply whip by hand.
- To assemble, add a dollop of yogurt mixture on the bottom of your cup, add the granola then the berries. Continue doing this order of layers until you reach the edge of your glass. Sprinkle with cinnamon and drizzle with maple or chocolate syrup. Yummy!
Note:
You can substitute half and half with milk if you prefer or even fat free milk.
