Oysters, calamari, and cocktail shrimp are some of the most well known options here in the States to pair with beer! In the Philippines, these types of snacks are called pulutan, named such because literally translated, it is “to pick up” (just like you would the above snacks!). And of course, it’s no different from the American way; you’ll need some ice cold beer on hand when serving these!
Ingredients:
- 1 lb dried anchovies ( dilis)
- 1 cup flour
- 2 tbsp potato starch or cornstarch
- 2 tsp pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp salt
- 1 tsp chicken flavor ( optional)
Directions:
- Wash the dried anchovies in cold water three times. Drain.
- In a bowl, add all purpose flour, cornstarch, pepper, garlic powder, onion powder, and salt. Mix to combine.
- Add the anchovies. Mix until all the anchovies are covered with the mixture.
- Deep fry in batches until crispy and golden brown.
- Transfer into a dish. Serve with spicy vinegar.
- To make the sweet and spicy anchovies follow the recipe below. The sweet and spicy sauce is good for half of the fried anchovies , if you decide to use all of the fried anchovies just double the recipe below.
Sweet and Spicy Sauce
Ingredients:
- 3 tbsp sweet chili sauce (springroll sauce)
- 2 tbsp banana ketchup
- 1/4 cup brown sugar
- 1 tbsp cayenne pepper
- 1/4 tsp salt
- 1 tbsp water
Directions:
- In a bowl, add all the ingredients and mix to combine.
- In a heated saucepan, add the fried anchovies. Cook and stir until the sauce is almost dried out.
- Transfer into a dish and serve. Enjoy!
Note:
Banana ketchup is available in any asian store and some local grocery store. If you can’ t find it you can substitute it with tomato ketchup. If you want just crispy anchovies, just skip the sweet sauce.
