It’s so much better to prepare this dish when you have someone else doing the frying! But, to be honest, once you start eating it, oh my goodness! The crackling sound of the skin and the tenderness of the meat will be enough to help you forget about all that hot oil that was splattering on your face earlier.
Ingredients:
- 3 pcs. pork hocks or 1 pork leg
- 2 tsp salt
- 1 tsp pepper
- 5 bay leaves
- vegetable oil for deep frying
Directions:
- Place your pork leg in a pot and filled it with water until you cover the pork.
- Add the salt, pepper, and bay leaves.
- Bring to a boil and simmer for about an hour or until the meat is tender. Allow to cool. Pat it dry with paper towel.
- Deep fry until it’s brown and crispy.
- Serve with the dipping sauce and a bottle of cold beer!
Dipping Sauce:
- 1/4 cup coconut vinegar
- 2 tbsp soy sauce
- 2 cloves of garlic, crushed
- 1 1/2 tbsp brown sugar
- 1/2 tsp pepper flakes
- 1 bird’s eye chili, chopped
Directions:
- Mix all the ingredients together.
- Transfer to a bowl and top with extra chili if you prefer.
- Enjoy!
