Tonight is Italian night, and you need to make an appetizer. What will it be? Chances are you may have most or all of these ingredients below! This recipe is quick and easy, and goes great with baguette slices. You can even make the leftover as a pasta sauce.Try it out!
Ingredients:
- 12 oz cherry tomatoes, cut into halves
- 4 oz fresh mozzarella, cut into small cubes
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, grated
- 7 cloves roasted garlic, mashed
- 2 tbsp balsamic vinegar
- 1/4 cup parmesan cheese
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup fresh basil, chiffonade
Directions:
- Cut the tomatoes in half and place in a bowl.
- Chop the mozzarella into cubes.
- Combine the mozzarella with the tomatoes and add in the olive oil. Toss together.
- Add the garlic, balsamic vinegar, and parmesan cheese. Mix until combine.
- Season with salt and pepper. Stir.
- Add the fresh basil. Toss lightly.
- Serve with sliced toasted baguette. Enjoy!
