My kids don’t like quinoa, period. To solve that problem, I added some dried fruit bits to make it a little sweeter! Unfortunately, because they really hate quinoa, they still don’t like it, but they eat it without complaints; that’s good enough for me!
Ingredients
- 2 cups quinoa
- 2 1/2 cups of water
- 1 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp butter
- 1/4 cup minced red onion
- 1/2 cup dried cranberries
- 1/2 cup dried apricot
- 1/2 fresh fuji apple
- 1/8 cup fresh parsley finely chopped
- Juice of 1 orange
Directions:
- In a pot, bring the 2 1/2 cups water to a boil.
- Add the quinoa, salt, pepper and butter. Stir and cover with lid.
- Simmer until the water is absorbed.
- Transfer the cooked quinoa into a bowl. Add the red onion, cranberries, apricot, fuji apples. Mix well to combined.
- Add the orange juice and seasoned with salt and pepper.
- Serve. Enjoy!
