Fruity Quinoa

My kids don’t like quinoa, period. To solve that problem, I added some dried fruit bits to make it a little sweeter! Unfortunately, because they really hate quinoa, they still don’t like it, but they eat it without complaints; that’s good enough for me!

Ingredients

  • 2 cups quinoa
  • 2 1/2 cups of water
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp butter
  • 1/4 cup minced red onion
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricot
  • 1/2 fresh fuji apple
  • 1/8 cup fresh parsley finely chopped
  • Juice of 1 orange

Directions:

  • In a pot, bring the 2 1/2 cups water to a boil.
  • Add the quinoa, salt, pepper and butter. Stir and cover with lid.
  • Simmer until the water is absorbed.
  • Transfer the cooked quinoa into a bowl. Add the red onion, cranberries, apricot, fuji apples. Mix well to combined.
  • Add the orange juice and seasoned with salt and pepper.
  • Serve. Enjoy!
