Ginataang Pork Ribs

Big thanks to my friend Lani for showing me this recipe; this is her specialty! She always have this dish whenever we come to her house (must be her favorite). The creaminess of the coconut, savory shrimp paste, and spicy jalapeno are all bound to make you hungry even when you aren’t!

Ingredients:

  • 2 lbs pork short ribs
  • 1 head of garlic, crushed
  • 1 whole yellow onions, finely chopped
  • 1 tbsp ginger, finely chopped
  • 2 tbsp coco vinegar
  • 1 cup coconut cream
  • 2 jalapenos, finely chopped
  • 1 banana pepper
  • 5 bay leaves
  • 2 tbsp barrio fiesta original shrimp paste
  • 1/2 tsp pepper

Directions:

  • In a pan, heat 2 tbsp oil and saute the garlic until soft.
  • Add the meat and saute on low heat until brown. Make sure you don’t burn the garlic.
  • Add the onions and saute until soft, then add the ginger.
  • Add the coconut cream, bay leaves, jalapenos, shrimp paste and pepper.
  • Simmer until the pork is very tender.
  • Add the banana pepper once cooked.
  • Serve with steamed rice and spicy vinegar. Yummy!
I cut the pork ribs into small sizes.
Saute the garlic until soft.
Add the pork and saute until browned.
Saute it in medium low heat so the garlic doesn’t burn.
Add the onions and ginger.
Saute the onions, and ginger for a few minutes.
Add the shrimp paste. I prefer the Barrio Fiesta brand because that’s what my friend Lani used but this is what’s readily available so I just used this.
Add the coconut cream and bay leaves.
Add the jalapeno (you can remove some of the seeds if you don’t want it too spicy).
MIx and simmer for 30 minutes.
This is so good and the smell of the coconut and jalapeno…fantastic!
