Halo-halo is one of the most popular desserts in the Philippines! Think shaved ice to the next level! The topping possibilities are almost endless. There are many variations that include different combinations of sweet potato, sweet plantain, purple jam, jackfruit, rice flakes, coconut gel, palm seeds, and more!
Ingredients:
- 2 medium sized sweet potatoes
- 2 ripe saba banana (plantain), cut into chunks
- 2 cups water
- 1 cup sugar
- 1 cup nata de coco (coconut gel)
- 1 cup kaong (sugar palm)
- 1 cup cannelini beans (sweetened)
- 1 cup cooked boba
- 2 cups cubed green gelatin
Toppings:
- 1 cup ube halaya (purple yam)
- 1 cup langka (jackfruit), sliced thinly
- 1 cup cubed leche flan (egg yolk flan)
- Cherries
Directions:
To make the sweet potato and saba (plantain):
- In a pot, combine 1 cup of water and 1/2 cup of sugar. Bring to a boil and stir until the sugar has dissolved.
- Add the sweet potatoes and cook until they’re tender.
- Transfer into a dish.
- Do the same with the saba banana and use the remaining water and sugar.
- Prepare the toppings by placing each in a small bowl.
- In a tall glass, layer the bottom with all of the listed ingredients.
- Add shaved ice and press it with your palm to tightly pack it.
- Pour evaporated milk on top.
- Top with a spoonful of ube, flan, jackfruit, and cherries!
