This baked potato is a great side dish and can be made in advanced. Super easy to make and just delicious!
Ingredients:
- 3 pcs russet potatoes
- 1/2 cup sour cream
- 2 1/2 cups grated cheddar cheese
- 2 tbsp butter
- 7 strips of bacon, fried and crumbled
- salt and pepper
- Olive oil
- Spring onions or chives, finely chopped
Directions:
- Poke the potatoes with a fork and rub it with oil and salt.
- Wrap the potato with aluminum foil.
- Place in a baking pan and bake at 350 degrees F for 45 minutes to an hour depending on the size of the potato.
- Cut the potatoes in half.
- Scrape out the inside of the potato and place it in a bowl. Save the skin.
- Mashed the potato until smooth and no more lumps. You can also use a food processor for easier mixing.
- Add the sour cream, 1 1/2 cup cheddar cheese, butter, salt and 1/2 tsp pepper.
- Fill each potatoes with the sour cream mixture.
- Top each potatoes with the remaining cheese, bacon and chives.
- Bake for another 20 minutes at 350 degrees F or until the cheese has melted.
- Top it with sour cream, bacon,chives and sweet pickled chilies. Yummy!
Note:
When scooping out the potato be careful not to break the skin.
