Loaded Twice Baked Potato

This baked potato is a great side dish and can be made in advanced. Super easy to make and just delicious!

Ingredients:

  • 3 pcs russet potatoes
  • 1/2 cup sour cream
  • 2 1/2 cups grated cheddar cheese
  • 2 tbsp butter
  • 7 strips of bacon, fried and crumbled
  • salt and pepper
  • Olive oil
  • Spring onions or chives, finely chopped

Directions:

  1. Poke the potatoes with a fork and rub it with oil and salt.
  2. Wrap the potato with aluminum foil.
  3. Place in a baking pan and bake at 350 degrees F for 45 minutes to an hour depending on the size of the potato.
  4. Cut the potatoes in half.
  5. Scrape out the inside of the potato and place it in a bowl. Save the skin.
  6. Mashed the potato until smooth and no more lumps. You can also use a food processor for easier mixing.
  7. Add the sour cream, 1 1/2 cup cheddar cheese, butter, salt and 1/2 tsp pepper.
  8. Fill each potatoes with the sour cream mixture.
  9. Top each potatoes with the remaining cheese, bacon and chives.
  10. Bake for another 20 minutes at 350 degrees F or until the cheese has melted.
  11. Top it with sour cream, bacon,chives and sweet pickled chilies. Yummy!

Note:

When scooping out the potato be careful not to break the skin.

Poke the potato with a fork several times.
Rub the potato with some salt.

Add the grated cheese and spring onions.
Add the bacon and bake at 350 degrees F.
Add the rest of the toppings and serve while warm!
