No Mexican main dish is complete without rice! Although regular Spanish rice often does just fine, this green salsa-enhanced Mexican Green Rice definitely packs the kick your dishes never knew they needed! This recipe pairs well with my Beef Fajita recipe, be sure to check it out as well!
Ingredients:
- 2 cups long grain rice
- 3 tbsp olive oil
- 4 cloves garlic, grated
- 2 tsp cumin
- 2 tsp coriander
- 2 cups chicken stock
- 3/4 cup green salsa
- 1 cup chopped cilantro
- 1 lime
- 1 jalapeno
- salt and pepper
Directions:
- In a heated pot, add 3 tbsp oil and 2 cups of rice. Saute in medium high heat until the rice is opaque in color. This should take about 15 to 20 minutes.
- Add the garlic, cumin, and coriander. Stir and cook for another 5 minutes.
- Add the chicken stock, green salsa, and cilantro. Stir and cover with lid. Simmer for 30 minutes or until the rice is cooked. Check every 15 minutes and scrape the bottom of the pan to make sure it doesn’t stick to the bottom of the pan.
- Serve with beef fajita, Pico de Gallo, guacamole, and sour cream. Yum!
