This dish is packed with all the good stuff! The main ingredients are bittermelon, moringa, and of course the mung beans! To give its savory side a boost, pork cracklings are our tastiest option!
Ingredients:
- 5 cloves garlic, minced
- 1 medium onion, finely chopped
- 3 roma tomatoes, chopped
- 12 oz mung beans
- 10 cups water
- 1 tbsp chicken base (if using water)
- 2 medium sized bittermelons
- Bunch of moringa leaves or spinach
- Bag of pork cracklings
- Salt and pepper to taste
Directions:
- In a heated pot, add 3 tbsp olive oil. Add the garlic and saute for a few minutes.
- Add the onions and tomatoes. Cook for a few minutes.
- Add the mung beans, five cups of water and chicken base. Stir and simmer until tender.
- Using a potato masher, mash the beans until its mushy.
- Add the remaining liquid and simmer for another 20 minutes.
- Season with salt and pepper.
- Add the chopped bittermelon and simmer for another 15 minutes.
- Add the moringa leaves and the pork cracklings.
- Simmer for 10 more minutes.
- Serve with warm rice. Enjoy!
Note:
If you don’t like pork cracklings, you can also use shrimp or pork belly sauteed with the garlic.
