When we visited the Philippines, we went to a town called Laguna. My brother Genesis took us to this place that sells a special snack called pichi pichi. He bought a box to be eaten only when we get home, since he had just recently bought his car, so he gave it to me so the kids wouldn’t eat it. But it was too much of a temptation for me though, so I ate piece after piece. By the time we get home I ate almost half of it😁 Yes, its that good!
Ingredients:
- 1 pkg (16oz) grated cassava (available in asian store)
- 1 1/3 cups pandan water or water
- 1 1/4 cup sugar
- 1/2 tsp pandan essence
- 1/4 tsp lye water (optional)
- 1 cup freshly grated coconut
- 1 cup yellow cheddar cheese, finely grated
Directions:
- Mix pandan water, sugar and pandan essence. Mix until the sugar has dissolved.
- Add the grated cassava and mix well.
- Pour in round molds and steam for 45 minutes on medium high heat.
- Once cooked, allow to cool for a little bit and start shaping your pichi pichi by using an ice cream scoop and shape it like balls.
- Roll in grated coconut and arrange in a platter and sprinkle all the cheese on top or you can roll half in grated cheese and half in grated coconut, whichever you prefer.
- Enjoy with your favorite tea!
Note:
It’s important to bring the water to a rapid boil before adding the cassava so it don’t settle on the bottom.
