This dish is great with grilled fish or shrimp. You can either serve it with sweet chili sauce or spicy garlic sauce.
Ingredients:
- 2 cups basmati rice
- 1 1/2 cups chicken stock
- 1 cup pineapple juice
- 1 tsp chicken flavor
- 2 tsp sesame oil
- 2 tbsp oyster sauce
- 2 tbsp hoisin sauce
- 1 tbsp ginger, grated
- 2 cups pineapple, cubed
- 1/2 cup red bellpepoer
- 1/2 cup green peas
- 1 cup ham, cubed
- 1/2 cup corn kernels
- 2 tbsp lime juice
- 3 tbsp butter
- 4 cloves of garlic, crushed
- 1/2 cup yellow onion, finely chopped
- 2 tbsp green onions, chopped
- 3 tbsp cilantro, chopped
- Salt and pepper
Directions:
- Place the basmati rice, pineapple juice and chicken stock in a pot.
- Add the chicken flavor, sesame oil, oyster sauce, hoisin sauce, and grated ginger. Stir.
- Bring to a boil and simmer until the rice is cooked.
- In a heated saute pan, add the butter, garlic, and onions. Cook until the onions are translucent.
- Add the ham, carrots and corn. Continue sauteing for a few more minutes.
- Add the pineapple tidbits, green peas and bellpepper.
- Add the rice with the vegetables. Stir and cook in a low heat for another five minutes.
- Season with salt and pepper if necessary.
- Top with spring onions and cilantro.
- Serve with spicy garlic sauce.
Note:
You can also add toasted almonds or cashews on top or you can also serve it with grilled chicken, shrimp or fish!
