Pork barbecue is a very popular street food in the Philippines. However, virtually everyone has their own version of the recipe. The most popular involves marinating the meat in soy sauce and 7-UP. Yeah, my kids were shocked to see me pouring precious 7-UP on some raw meat.
Ingredients:
- 1 lb pork belly, sliced thinly
- 1 lb pork shoulder
- 1 cup 7-up
- 1/2 cup soysauce
- 4 tbsp brown sugar
- 4 tbsp coconut vinegar
- 10 cloves of garlic, grated
- 1 tsp pepper
- bamboo skewers
Directions:
- In a stainless steel bowl, mix 7-up, soysauce, brown sugar, coconut vinegar, garlic and pepper. This is your marinade.
- Slice the pork belly and the pork shoulder into long thin pieces (like bacon).
- Cut the strips about 3 inches long.
- Marinate the meat overnight.
- Soak the skewers in water for an hour.
- Thread marinated pork into each bamboo skewer. Do it alternately, pork belly then pork shoulder and just do this pattern until you finished all the meat.
- Prepare your grill and place your barbecue. You can baste the meat with the marinade to make it more flavorful.
- Enjoy with your favorite beer!
