I made this Panini sandwich from leftover pot roast. Every morning it’s rush hour in our kitchen! With so many people in my kitchen and so little time, I found this to be a great recipe for them to pack for lunch.
Ingredients
- Pot roast meat, shredded
- Provolone cheese, sliced
- Sliced or grated mozzarella
- Steak tomatoes, sliced
- Salt and pepper
- Extra virgin olive oil
- Ciabatta bread
- Basil leaves, optional
Directions:
- In a small pan, heat the pot roast until its almost dry.
- Prepare your panini and heat to medium high.
- Brush the ciabatta roll with olive oil.
- Lay a slice of provolone cheese on your bread top it with some of the pot roast.
- Add a couple of sliced tomatoes.
- Add some basil on top.
- Add mozzarella cheese and basil leaves on top.
Note:
If you don’t have a panini maker you can always use a non-stick pan and just press the sandwich as it cooks. You can also use just mozzarella cheese if provolone cheese is not available.
That cheese looks well melted lol
