Pot Roast Panini

I made this Panini sandwich from leftover pot roast. Every morning it’s rush hour in our kitchen! With so many people in my kitchen and so little time, I found this to be a great recipe for them to pack for lunch.

Ingredients

  • Pot roast meat, shredded
  • Provolone cheese, sliced
  • Sliced or grated mozzarella
  • Steak tomatoes, sliced
  • Salt and pepper
  • Extra virgin olive oil
  • Ciabatta bread
  • Basil leaves, optional

Directions:

  • In a small pan, heat the pot roast until its almost dry.
  • Prepare your panini and heat to medium high.
  • Brush the ciabatta roll with olive oil.
  • Lay a slice of provolone cheese on your bread top it with some of the pot roast.
  • Add a couple of sliced tomatoes.
  • Add some basil on top.
  • Add mozzarella cheese and basil leaves on top.

Note:

If you don’t have a panini maker you can always use a non-stick pan and just press the sandwich as it cooks. You can also use just mozzarella cheese if provolone cheese is not available.
