This red salsa is based on a recipe used for tacos. My son went with his friend to a taco shop and brought this salsa. He asked me if I could copy their recipe. So after multiple trials and errors, I am finally happy with the result!
Ingredients:
- 1/2 lb tomatillos, husks removed
- 1 1/2 lb roma tomatoes
- 2 jalapeños
- 1 yellow onion, cut in half
- 3 cloves garlic, peeled
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1/2 cup chicken stock
- Salt and pepper
Directions:
- Preheat your grill and brush with some oil.
- Place the vegetables on the grill.
- Cook them until the skin is charred.
- In a pot, add all the grilled vegetables, onion, garlic, cilantro, cumin, coriander, tomato bouillon, and chicken stock. Bring to a boil and simmer for about half an hour.
- Using a handheld blender, puree the mixture until smooth.
- Season with salt and pepper.
- Allow to cool. Transfer into a jar and cover with lid.
- Refrigerate until ready to use.
