Red Salsa

This red salsa is based on a recipe used for tacos. My son went with his friend to a taco shop and brought this salsa. He asked me if I could copy their recipe. So after multiple trials and errors, I am finally happy with the result!

Ingredients:

  • 1/2 lb tomatillos, husks removed
  • 1 1/2 lb roma tomatoes
  • 2 jalapeños
  • 1 yellow onion, cut in half
  • 3 cloves garlic, peeled
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1/2 cup chicken stock
  • Salt and pepper

Directions:

  1. Preheat your grill and brush with some oil.
  2. Place the vegetables on the grill.
  3. Cook them until the skin is charred.
  4. In a pot, add all the grilled vegetables, onion, garlic, cilantro, cumin, coriander, tomato bouillon, and chicken stock. Bring to a boil and simmer for about half an hour.
  5. Using a handheld blender, puree the mixture until smooth.
  6. Season with salt and pepper.
  7. Allow to cool. Transfer into a jar and cover with lid.
  8. Refrigerate until ready to use.
