Sardines are a popular cheap food in the Philippines! Inexpensive and readily available, it can be used in a variety of dishes for almost any budget. I credit my mom for helping me to appreciate the versatility of sardines, with this recipe!
Ingredients:
- 2 lbs sardines, cleaned and scales removed
- 2 roma tomatoes, sliced thinly
- 3 cups tomato sauce
- 1/2 cup water
- 2 tsp salt
- 1 tsp white pepper
- Juice of half lemon, about 1/4 cup
- 10 bay leaves
- 1/3 cup extra virgin olive oil
Directions:
- Arrange the slice tomatoes at the bottom of the your pressure cooker (preferably instapot). This will help the fish not to stick at the botttom of the pot.
- Add the tomatoe sauce, water, salt, pepper, lemon juice, and bay leaves.
- Add the sardines on top.
- Cook for 30 to 45 minutes in a pressure cooker.
- When it’s cooked, drizzle the olive oil on top.
