Sardines In Tomato Sauce

Sardines are a popular cheap food in the Philippines! Inexpensive and readily available, it can be used in a variety of dishes for almost any budget. I credit my mom for helping me to appreciate the versatility of sardines, with this recipe!

Ingredients:

  • 2 lbs sardines, cleaned and scales removed
  • 2 roma tomatoes, sliced thinly
  • 3 cups tomato sauce
  • 1/2 cup water
  • 2 tsp salt
  • 1 tsp white pepper
  • Juice of half lemon, about 1/4 cup
  • 10 bay leaves
  • 1/3 cup extra virgin olive oil

Directions:

  1. Arrange the slice tomatoes at the bottom of the your pressure cooker (preferably instapot). This will help the fish not to stick at the botttom of the pot.
  2. Add the tomatoe sauce, water, salt, pepper, lemon juice, and bay leaves.
  3. Add the sardines on top.
  4. Cook for 30 to 45 minutes in a pressure cooker.
  5. When it’s cooked, drizzle the olive oil on top.
