If Chinese cuisine has hot and sour soup, then you could say Filipinos have Sinigang soup! You can use pork ribs, beef neck, fish, or shrimp. The sourness comes from the tamarind extract, but if you have a hard time getting some, a tamarind mix called Sinigang mix, available at most Asian grocery stores, will work just fine!
Ingredients:
- 1 lb shrimp
- 1 head red onion, quartered
- 2 tomatoes, quartered
- 1 inch ginger sliced thinly
- 1 small horseradish, quartered
- bunch of spinach
- 5 cups of water or hugas bigas (rice water)
- 1 tbsp Knorr sinigang mix
- 1 banana pepper
- 4 tbsp butter
- 2 tbsp olive oil
Directions:
- In a heated pot, add the butter and oil. Saute the onion, ginger, horseradish, and tomatoes for a few minutes.
- Add the water and one tablespoon sinigang mix (you can add more if you want a more sour taste). Mix and simmer until tender.
- Add the shrimp and banana pepper. Simmer for 2 to 3 minutes.
- Add the spinach and turn off the heat.
- Serve with steamed rice and fish sauce on the side.
