Tikka Masala

Ingredients:

  • 2 lbs boneless chicken breast
  • 2 tsp ginger, grated
  • 4 cloves garlic, grated
  • 1 tbsp garam masala
  • 1 tsp freshly ground cumin
  • 2 tsp salt
  • 1/2 tsp ground black pepper

For the sauce:

  • 5 cloves garlic, minced
  • 2 shallots, minced
  • 1 tbsp ginger, grated
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 tsp turmeric powder
  • 1 tsp cayenne pepper
  • 1 tbsp paprika
  • 2 (15 oz cans) tomato sauce
  • 1 tbsp sugar
  • 2 tsp chicken bouillon
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 cup heavy whipping cream

Directions:

  1. In a bowl, add the chicken into the marinade. Marinate for 2 hrs or even better, overnight.
  2. Preheat the grill to 350*F.
  3. Line the chicken chunks onto the skewers .Grill the chicken until brown. They’ll cook further in the sauce so don’t worry about thoroughly cooking them for now.
  4. Remove the chicken from the skewers and set aside.

To make the sauce:

  1. In a heated pot, add oil, garlic, ginger and onions. Saute for a few minutes.
  2. Add the garam masala, cumin, coriander, turmeric, cayenne pepper, and paprika. Saute for a few seconds just until fragrant.
  3. Add the tomato sauce, sugar,chicken bouillon, salt, and pepper. Stir and let simmer for about half an hour.
  4. Add the cream and simmer for couple of minutes.
  5. Add the grilled chicken and mix until totally combined. Simmer for a few another 20 minutes.
  6. Serve while warm with steamed basmati rice. Enjoy!
