Ube Halaya

Ube halaya is not to be mistaken with ube kalamay. One is mixed with glutinous flour so its sticky when cooked, while the other is just purple yam and condensed milk, usually used with halo-halo or cakes or eaten as a dessert. Both are good, well to be honest anything with ube is good to me!

Ingredients:

  • 1 pkg (16 oz) grated ube, purple yam
  • 1 can condensed milk
  • 4 tbsp butter

Directions:

  1. In a heated pan, add the butter. Stir until melted.
  2. Add the grated yam and condensed milk. Using a whisk, stir until combined.
  3. Continue mixing until it becomes thick. It’s done when you can lift it all as one piece!

Note:

Purple yam is available in most Asian stores. Make sure you get the grated type that is deep purple in color!
