Coconut Panna Cotta with Fresh Passionfruit

Ingredients:

  • 2 cups coconut cream
  • 1 cup heavy whipping cream
  • 1/3 cup granulated sugar
  • 1 envelop gelatine
  • 1 cup fresh passionfruit or any fruit of your choice (try blueberries, blackberries, or raspberries)
  • 3 tbsp granulated sugar
  • 3 tbsp water

Directions:

  1. In a small bowl, add 2 tbsp water and sprinkle the gelatin. Set aside.
  2. In a saucepan, bring heavy cream, coconut cream, and sugar to a simmer (don’t boil) and continue stirring.
  3. Stir the gelatin mixture and vanilla into the coconut mixture. Stir until the gelatin is dissolved.
  4. Divide the coconut mixture into ramekins and allow to cool. Refrigerate for 3 hours or overnight.
  5. In a small bowl, add the 3 tablespoons sugar and 3 tablespoons water. Bring to a boil and stir until the sugar has dissolved.
  6. Add the passionfruit puree and turn off the heat. Mix well and allow to cool.
  7. To serve, transfer the panna cotta by running a knife around the edge of each ramekin and invert into a plate.
  8. Pour the fresh fruit puree on top and serve!
  9. Enjoy!

Note:

If passionfruit is not available, you can use mixed berries such as blueberries, blackberries or raspberries.
