Bicol Express

Bicol Express is a Filipino dish made with pork, coconut cream and lots of chili (labuyo). A very tasty, flavorful dish!

Ingredients:

  • 2 lbs pork shoulder, sliced thinly
  • 4 tbsp coconut oil
  • 1 head of garlic, peeled and crushed
  • 1 medium sized yellow onion, finely chopped
  • 1 tbsp ginger, sliced thinly
  • 2 tbsp cooked shrimp paste (I use Barrio Fiesta), or fish sauce
  • 1-16 oz can of coconut cream
  • 1/4 cup water
  • Birds eye chilis, 6 to 10 pieces
  • 2 hatch chili peppers, roasted (optional)
  • Handful of cilantro, chopped
  • 2 pcs green onion

Directions:

  1. In a pan, heat 4 tablespoons of coconut oil.
  2. Add the garlic and cook until soft.
  3. Add the chopped onion and continue stirring for a few more minutes.
  4. Add the pork and ginger. Saute until the pork is no longer pink.
  5. Add the shrimp paste and continue to stir for a few minutes.
  6. Add the water, half of the coconut milk, roasted pepper, and birds eye chili.
  7. Bring to a boil, cover and simmer for 30 to 40 minutes until the meat is tender.
  8. Pour in the rest of the coconut milk and simmer for another 5 minutes.
  9. Garnish with chopped green onion and some fresh birds eye chili pepper on top. Serve with warm steamed rice.
