Fresh Spring Rolls with Homemade Peanut Sauce

Ingredients:

  • Pork, cooked and chopped thinly
  • Tofu, fried and chopped thinly
  • Shrimp, cooked and peeled
  • Cucumber, sliced thinly
  • Bean sprout
  • Lettuce leaves
  • Thai basil
  • Rice noodles
  • Rice paper

For the Peanut Sauce:

1/4 cup peanut butter

2 tbsp hoisin sauce

1 tbsp brown sugar

3 tbsp water, more if needed

Directions:

  1. Submerge the rice noodles in warm water. Leave for 20 minutes or until soft.
  2. Arrange the fillings on a plate so it will be easy to assemble.
  3. Add water in a bowl that will fit the rice paper, but don’t soak the rice paper yet.
  4. Once everything is assembled, soak one rice paper in the bowl of water (never leave the rice paper in water, it will quickly get soggy and you won’t be able to use it!)
  5. Place the wet rice paper on a flat surface (chopping board is best).
  6. Place the lettuce leaf first, then the Thai basil on top.
  7. Line the center with pork, tofu, and cucumber.
  8. Place the bean sprout and noodles on top.
  9. Add the shrimp by placing it just above the lettuce leaves. It makes for a good looking spring roll.
  10. Now, it’s ready to wrap. Fold both sides and then fold over the bottom part. Roll it gently but firmly for a tight spring roll.

To make the peanut dip:

In a small pot, add the peanut butter, hoisin sauce, and sugar. Whisk until smooth.

Turn on the heat and add the water gradually while whisking. You can add more water a tablespoon at a time if the sauce is too thick.
