Ingredients:
- 3 saba banana or plantain
- 1/2 cup butter or margarine
- 1 cup jackfruit, sliced thinly
- 1 cup pineapple juice
- 1/2 rum
- 1 cup brown sugar
- 3 tsp cinnamon powder
- 1 tsp banana flavor
- 1/8 tsp chili powder
- skim milk
- Springroll (lumpia) wrapper
Directions:
- Peel and slice the banana in half then cut into four strip.
- Wrap the banana in lumpia wrapper.
- Deep fry in vegetable oil for about 20 minutes.
- In a heated wok, add the butter and jackfruit. Saute the jackfruit until tender about 10 minutes.
- Add the pineapple juice, rum, sugar, 2 tsp cinnamon powder, banana flavor and chili powder. Saute until thick or the sugar starts to caramelize.
- Add the fried banana and saute for another 5 minutes.
- Transfer into a plate and drizzle with cinnamon powder and skim milk.
- Serve while warm. Yum! Yum! Yum!
