This fried rice is so flavorful. The secret? Rice that’s been cooked in olive oil and soy sauce. The result is a flavorful rice!
Ingredients:
- 3 cups Jasmine rice
- 2 1/2 cups water
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 1 lb shrimp, shelled and deveined
- 1 lb sirloin steak, sliced thinly
- 7 cloves garlic, crushed
- 1 small sized yellow onion, minced
- 1/2 cup carrots, finely chopped
- 1/4 cup green peas
- 4 pieces green onions, finely chopped
- 7 eggs
Directions:
- Wash and drain the rice.
- Add the water, soy sauce, and olive oil.
- Bring to a boil and simmer until the rice is cooked. Allow to cool or better yet, refrigerate overnight.
- Place the eggs in a bowl. Season with salt and pepper and beat well.
- In a heated saute pan (or better, a wok), add two tablespoons olive oil. Add the beaten eggs and scramble. Transfer onto a plate and set aside.
- Add two more tablespoons oil and add the shrimp. Saute for about a minute or until the shrimp is pink in color. Don’t worry, it will be cooked again later.
- Remove the shrimp. Transfer onto a plate and set aside.
- Add two more tablespoons oil and add the steak. Season with salt and pepper. Saute for about 5 minutes. Set aside.
- Add two more tablespoons oil and add the garlic. Saute until soft. Add the onions and saute until translucent.
- Add the rice and carrots. Mix well.
- Add the green peas, spring onions, and eggs.
- Mix together until combined.
- Serve with sriracha or chili garlic sauce. Enjoy!
Note:
You can use chicken breast instead of beef. If you want to make it vegetarian, use fried tofu and some chopped steamed bokchoy instead.
