Beef and Shrimp Fried Rice

This fried rice is so flavorful. The secret? Rice that’s been cooked in olive oil and soy sauce. The result is a flavorful rice!


Ingredients:

  • 3 cups Jasmine rice
  • 2 1/2 cups water
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 lb shrimp, shelled and deveined
  • 1 lb sirloin steak, sliced thinly
  • 7 cloves garlic, crushed
  • 1 small sized yellow onion, minced
  • 1/2 cup carrots, finely chopped
  • 1/4 cup green peas
  • 4 pieces green onions, finely chopped
  • 7 eggs

Directions:

  1. Wash and drain the rice.
  2. Add the water, soy sauce, and olive oil.
  3. Bring to a boil and simmer until the rice is cooked. Allow to cool or better yet, refrigerate overnight.
  4. Place the eggs in a bowl. Season with salt and pepper and beat well.
  5. In a heated saute pan (or better, a wok), add two tablespoons olive oil. Add the beaten eggs and scramble. Transfer onto a plate and set aside.
  6. Add two more tablespoons oil and add the shrimp. Saute for about a minute or until the shrimp is pink in color. Don’t worry, it will be cooked again later.
  7. Remove the shrimp. Transfer onto a plate and set aside.
  8. Add two more tablespoons oil and add the steak. Season with salt and pepper. Saute for about 5 minutes. Set aside.
  9. Add two more tablespoons oil and add the garlic. Saute until soft. Add the onions and saute until translucent.
  10. Add the rice and carrots. Mix well.
  11. Add the green peas, spring onions, and eggs.
  12. Mix together until combined.
  13. Serve with sriracha or chili garlic sauce. Enjoy!

Note:

You can use chicken breast instead of beef. If you want to make it vegetarian, use fried tofu and some chopped steamed bokchoy instead.
