Best Ever Strawberry Cake

This strawberry cake isn’t too sweet, and the addition of pudding makes the cake super moist! Whipping cream is my favorite frosting, as it isn’t too sugary and greasy. All of this makes for a cake that is light and delicious!

Ingredients:

  • 1 3/4 cups sugar
  • 1 1/2 stick butter
  • 4 eggwhites
  • 3 cups cake flour, sifted
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 pkg (3.4 oz) strawberry pudding mix
  • 1/2 tsp salt
  • 1 1/4 cup buttermilk
  • 1/2 cup strawberry puree
  • 1/4 cup vegetable oil
  • 2 tsp strawberry extract
  • 2 tsp beet powder for color (optional)

For the filling:

  • 1 cup strawberry puree
  • 1/2 cup sugar

For the frosting:

  • 2 cups heavy whipping cream
  • 2 oz white chocolate, melted
  • 1 tbsp strawberry gelatine

Directions:

  1. Preheat oven to 350°F. Grease two 9 inch cake pans.
  2. In a mixer bowl, cream the butter and sugar until light and fluffy. This will take about 4 to 5 minutes.
  3. Beat eggs in, one egg white at a time, making sure it’s mixed thoroughly.
  4. Sift the flour, baking powder, baking soda, strawberry pudding mix, and salt together.
  5. In a small bowl, add the buttermilk, strawberry puree, strawberry extract and vegetable oil.
  6. Stir the wet ingredients into the butter mixture alternately with the dry ingredients ending with the dry ingredients.
  7. Add the beet powder until combined.
  8. Divide the batter evenly between the two prepared baking pans.
  9. Bake at 350°F for 25 to 30 minutes or until a small stick inserted into the center comes out clean.
  10. Let cool for 5 to 10 minutes before transferring to a wire rack.

To make the filling:

  1. In a small pot, add the strawberry puree and sugar and stir until sugar is dissolved.
  2. Simmer until reduced in half. Set aside and let cool.

To make the frosting:

  1. In a clean dry mixer bowl, add the whipping cream and whip until soft peaks.
  2. Add the melted chocolate and whip until you reach firm peaks.
  3. Dissolve the gelatin in two tablespoons of tap water. Microwave for 5 to 10 seconds.
  4. While the mixer is running, add the dissolved gelatine in a steady stream. Mix for just a few seconds.

To assemble the cake:

  1. Place the cake on a cake stand.
  2. Spread strawberry jam on the center of the cake and spread until you cover the entire cake. You can also add some frosting on top of the jam if you want.
  3. Place the other cake on top and frost the cake. Refer to the picture below.
  4. Enjoy your cake with a cup of tea! 😋

Note:

If you can’t find strawberry pudding you can replace it with vanilla pudding mix.
