Black Bean Burger

I’m not gonna say that this burger taste like a regular burger coz it’s not! Having said that, this vegetarian burger recipe is really, really good! Thanks to the help of creamy avocado, fresh tomatoes and the sweet, tangy thousand island dressing. This burger is enjoyable to eat without the guilt of gaining weight.

Ingredients:

  • 2 (12 oz) can black beans, drained
  • 1/2 cup white or yellow onion, finely chopped or grated
  • 1 clove garlic, grated
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrots
  • 1 cup seasoned breadcrumbs or 3/4 cup ground oats
  • 1 tsp salt
  • 1/4 tsp black pepper
  • brioche buns or dinner rolls
  • 2 avocados, sliced thinly
  • 2 steak tomatoes, sliced thinly
  • Iceberg lettuce, (optional)
  • Thousand island dressing

Directions:

  1. In a food processor, add the beans and blend until smooth.
  2. Add the onions, garlic, celery, carrots, breadcrumbs, salt, and ground black pepper.
  3. Mix together until combined.
  4. Make a patty the size of your palm.
  5. In a heated pan, add olive oil and fry the patties until golden brown on both sides, about 5 minutes each side.
  6. To serve, place a burger on each bun. Add sliced avocado, tomato, and lettuce on top.
  7. Drizzle some dressing. Enjoy!
