Cornbread

My ideal cornbread would be soft and moist on the inside, with crispy edges, and drizzled with lots of honey! Look no further this recipe will have your guests coming back for seconds!

Ingredients:

  • 1 1/2 cups flour
  • 1 1/3 cup yellow cornmeal
  • 2 1/2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1 1/4 tsp salt
  • 3 eggs
  • 1/3 cup olive oil ( not extra virgin)
  • 3 tbsp honey

Directions:

  1. Preheat oven to 400 degrees.
  2. In a bowl, add flour, cornmeal, baking powder, and sugar. Mix to combine.
  3. In a separate bowl, mix together eggs, oil, and honey.
  4. Add the wet ingredients to dry ingredients.
  5. Mix with a fork until the batter is combined ( about 20 to 30 stroke). Do not overmix it or the bread will be tough!
  6. Pour the batter in a greased (8×8) baking pan.
  7. Bake for 30 to 40 minutes.
  8. Drizzle the cornbread with honey while it’s still warm. Enjoy!
