This soup is different from other sinigang recipe although they might look the same. The addition of miso paste adds a distinctive salty taste to it that makes it really unique in taste. This is very well- known dish in the Philippines and has different varieties as well.
Ingredients:
- 2 lbs salmon belly
- 5 cloves garlic, minced
- 1 medium sized yellow onion, finely chopped
- 3 roma tomatoes, finely chopped
- 1 tbsp ginger, cut into thin strips
- 1 cup water
- 1/4 cup miso paste
- 2 tsp sinigang mix (tamarind mix)
- 1 banana pepper
- 1 bunch mustasa leaves (mustard greens), chopped
Directions:
- In a heated pot, add 2 tablespoon oil. Add the garlic and ginger. Saute for a few minutes.
- Add the onion and saute until the onion is translucent.
- Add the tomatoes, miso paste, and sinigang mix and saute for a few more minutes.
- Add the water and stir until combined.
- Arrange the fish and banana pepper on top. Cover and simmer for 20 minutes or until the fish is cooked.
- Add the mustard greens. Simmer for another 10 minutes.
- Serve while warm. Yum!
