Salmon Belly in Miso Soup

This soup is different from other sinigang recipe although they might look the same. The addition of miso paste adds a distinctive salty taste to it that makes it really unique in taste. This is very well- known dish in the Philippines and has different varieties as well.

Ingredients:

  • 2 lbs salmon belly
  • 5 cloves garlic, minced
  • 1 medium sized yellow onion, finely chopped
  • 3 roma tomatoes, finely chopped
  • 1 tbsp ginger, cut into thin strips
  • 1 cup water
  • 1/4 cup miso paste
  • 2 tsp sinigang mix (tamarind mix)
  • 1 banana pepper
  • 1 bunch mustasa leaves (mustard greens), chopped

Directions:

  1. In a heated pot, add 2 tablespoon oil. Add the garlic and ginger. Saute for a few minutes.
  2. Add the onion and saute until the onion is translucent.
  3. Add the tomatoes, miso paste, and sinigang mix and saute for a few more minutes.
  4. Add the water and stir until combined.
  5. Arrange the fish and banana pepper on top. Cover and simmer for 20 minutes or until the fish is cooked.
  6. Add the mustard greens. Simmer for another 10 minutes.
  7. Serve while warm. Yum!
