Pupusas

We were invited one time at our friends house for a pupusa party. I had NO idea what pupusas were, and how good they were until my first bite! It was a very unique food that I had never tried, and from then on, it became my mission to try to make them!. The time at which I wrote this article marks the 7th time I’ve made them, and I’m finally happy with the result. Shoutout to my good friend Ana for giving me tips on how to make this wonderful dish!

Ingredients:

Filling:

  • 1 1/2 lb ground pork
  • 3 cloves garlic, crushed
  • 1/2 onion, chopped
  • 3 tomatoes, chopped
  • 1/2 tsp salt
  • 1/2 pepper
  • 16 oz red kidney beans
  • 3 cloves garlic, crushed
  • 1/2 head onion
  • 1 packet tomato flavor powder
  • 4 cups mozarella, grated

For the dough:

  • 4 cups masa harina
  • 3 1/4 cups water
  • 1 tsp salt

Directions:

  • Place the red kidney beans in a bowl of water and leave it overnight. Make sure you submerge it completely.
  • In a big pot, boil the red kidney, garlic, onion, salt and pepper. Simmer for 2 hours or until very tender. (Instapot works best on this)
  • Drain the beans completely. Puree in a food processor.
  • Set aside.
  • In a saute pan, add 2 tbsp oil and saute garlic and onion until translucent. Add the pork., chopped tomatoes, and tomato powder and saute until all the juices is completely dry out. This is important because you really need a dry filling. Season with salt and pepper.
  • Puree the pork mixture in a food processor.
  • Combine the bean mixture and the pork mixture in a bowl and mix very well.
  • Now for the dough, place your masa in a big bowl and add 1 tsp salt. Mix well.
  • Pour water on the masa 1 cup at a time and knead until you have a soft dough. Let the dough rest for 30 minutes.
  • Assemble by pinching a golf -size dough and make a ball. Flatten it and place about 2 tbsp of the filling, add the cheese and enclose the dough and flatten it with your palm. Don’t worry if the filling comes out just patch it with a dough.
  • Heat your skillet with a tablespoon oil and fry the pupusa about 5 minutes each.
  • Enjoy your pupusa with friends!

Note:

There’s a lot of pupusa filling you can choose from zucchini and cheese, chicharon and beans, shrimp or jalapeno and cheese.
