Frittata

Frittata is one of my favorite breakfast dishes. I usually serve it with steamed rice and ketchup because its my family’s favorite way of eating it! However if you wanna avoid carbs, serve this with hot cocoa (recipe on my website too) and some greens. Yum!😋

Ingredients:

  • 8 eggs
  • 1/4 cup milk
  • 1 medium sized yellow onions, finely chopped
  • 1 cup chopped ham
  • 3 roma tomatoes, finely chopped
  • 1 cup chopped mushrooms
  • 1/2 cup red bellpepper
  • 1/2 cup green bellpepper
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil
  • 1/ 2 tsp ground pepper
  • 1/2 tsp salt
  • 1 cup chopped fresh mozarella
  • 3 pcs green onion, finely chopped
  • 1 cup grated mozarella

Directions:

  1. In a bowl, beat eggs until frothy. Add the milk and mix well.
  2. In a heated pan, add 3 tbsp olive oil. Add the onions and saute until soft.
  3. Add the ham and saute for a few minutes.
  4. Add the tomatoes and mushrooms. Cook until soft and the juice is reduced. (tomatoes and mushrooms have a lot of liquid so make sure you reduce the liquid until its almost dry.
  5. Add the red bellpepper and green bellpepper. Stir and cook until tender.
  6. Add the crumbled fresh mozarella on top.
  7. Add the eggs and cover. Simmer until the eggs is half cook.
  8. Add the grated mozarella and green onion on top.
  9. Cook until the cheese has melted. (You can also transfer the frittata on a baking dish and bake until the cheese is melted and golden brown).
  10. Serve with hot cocoa and salad, or if you’re a Filipino like me, serve it with hot steamed rice and ketchup!😋

Note:

I am not a big fan of using non stick pans. I usually prefer stainless steel, but on this recipe, it’s a must that you use a non stick pan because it will stick to the pan and you’ll end up serving a scrambled egg!
