This is probably one of the easiest pasta dishes you can make. And my secret? Wonton wrappers! The end result is a mouth watering pasta. It’s light and satisfying, and has become one of my family’s favorite Italian dishes!
Ingredients:
- 1 pkg round wonton wrapper
- 8 oz spinach
- 1 cup ricotta cheese
- 3/4 cup parmesan cheese
- 1 egg
- 1/4 tsp pepper
- 1/2 tsp salt
- Pinch of nutmeg
- 2 jars marinara sauce (preferably Rao’s © Marinara Sauce)
- extra virgin olive oil
- red pepper flakes
- Italian cheese mix, or mozarella cheese, finely grated
- Grated parmesan cheese
Directions:
- In a pan, add the spinach and cook in a medium heat until the spinach is wilted.
- Squeeze the water out of the spinach and roughly chop the spinach.
- In a bowl, add the spinach, ricotta, parmesan cheese, egg, pepper, salt, and nutmeg. Mix well and refrigerate for 30 minutes.
- Place about a teaspoon of spinach mixture in the middle of a round wonton wrapper.
- Brush the edges with water or eggwhite.
- Fold the wonton in half to form a half moon. Bring the two corners together and press tightly to seal. Repeat with the remaining pieces of dough.
- Bring a large pot of water to a boil and add a teaspoon of kosher salt.
- Add the tortellini and cook for about 5 minutes or until the tortellini floats to the top.
- Using a slotted spoon transfer the tortellini into a dish. Set aside.
- Warm the marinara sauce in a saucepan.
- Add the tortellini and gently toss to combine.
- Add the Italian cheese, parmesan, red pepper flakes on top.
- Drizzle some extra virgin olive oil.
- Serve while warm. Buon Appetito!
