This dish is my Aunt Noemi’s specialty. She would always make this dish whenever we visited her in our hometown. The aroma of the latik is amazing; you can smell it before you enter her house!
Ingredients:
- 4 cups glutinuous flour
- 1/4 cup sugar
- 1 cup coconut milk
- 1 cup water
- 1 1/2 cups granulated sugar
- 2 cups water
- 2 cans coconut milk
Directions:
To make the dough:
- In a heated saute pan, add the glutinuous flour and saute until the flour is light brown, about 5 to 8 minutes.
- In a bowl, add the toasted glutinuous flour and sugar. Mix well.
- Add the coconut milk and water. Mix until smooth. You should have a soft dough.
- Transfer onto a greased baking dish that will fit your steamer.
- Steam on high heat for 15 minutes and simmer for another 30 minutes.
- Allow to cool. Cut into squares. (Grease your knife so the dough doesn’t stick)
To make a simple syrup:
- In a pot, add the water and sugar.
- Bring to a boil and simmer until the liquid is reduced to almost half.
To make the latik :
- In a deep pan, add the coconut milk.
- Bring to a boil and simmer until the coconut milk is thick and beginning to curdle. Make sure you stir every once in a while, so it doesn’t stick to the pan.
- When it starts to brown, its done. Refer to the picture below!
Note:
Try to get coconut cream instead of coconut milk. Cream will give you better results!
