Suman Kamoteng Kahoy

Suman is a Filipino snack usually wrapped in banana leaves. There are a lot of varieties of suman, but this one is my favorite. The recipe itself is super easy but making it is a challenge. My husband was complaining about grating the fresh cassava and preparing the banana leaves, it’s a lot of work but its worth it! I was surprised, even my kids love it!

Ingredients:

  • 6 cups grated cassava
  • 1 cup grated coconut
  • 1 /2 cup dark brown sugar or coconut sugar
  • 3/4 cup granulated sugar
  • 3/4 cup coconut milk

Directions:

  1. In a big bowl, add the grated cassava.
  2. Squeeze some of the juice. Press it gently, as you’ll want some of the juice from the cassava, so it’s not dry when cooked. Discard the rest of the juice.
  3. Add the grated coconut, sugar and coconut milk. Mix well.
  4. Prepare the banana leaves by washing and running them over a fire, to soften them and prevent breaking when folded. Do this until you finish all the banana leaves.
  5. Trim the side of the banana leaves where the thick end is. Then cut the leaves to about 10×10 inch squares.
  6. Place about two tablespoons of cassava mixture. Fold the banana leaves until the edges reach the end.
  7. Fold both ends to secure.
  8. Place in a steamer and steam on medium-high heat. Cook the cassava for about 45 minutes.
  9. Serve while warm. Enjoy!

Note:

Frozen grated cassava is also available in Asian stores.
