Filipino Cheese Cupcake


These aren’t like American muffins, as they’re more dense and crummy, like pound cake. In the Philippines we call these cheese cupcakes, although they don’t have icing on top. Hey, I didn’t name it! Thanks to my friend Marciano for giving me this recipe. This is so yummy!

Ingredients:

  • 1 cup (2 stick) butter, room temperature
  • 1/3 cup sugar
  • 2 cans condensed milk
  • 4 eggs
  • 1 tsp vanilla
  • 2 3/4 cups cake flour, sifted
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups sharp cheddar cheese, finely grated

Directions:

  1. Preheat oven to 350 F.
  2. In a bowl, sift the flour, salt and baking powder together.
  3. Cream the butter and sugar until light and fluffy, about 5 minutes..
  4. Add the vanilla and mix until combined.
  5. Add the eggs one at a time mixing well after each addition, about 30 seconds each time.
  6. Add the dry ingredients alternately with the condensed milk. Don’t overmix or the cake will be tough.
  7. Add the cheese and fold gently.
  8. Fill the muffin liner 3/4 full.
  9. Add the grated cheese on top.
  10. Bake for 20 to 25 minutes.
  11. Enjoy!
