Its been a while since I made this and when I do, it doesn’t last long. So when my husband saw me making these he hurried eating his dinner, so he can eat it😁 Classic palitaw is rolled in coconut sugar mixture, but we like the coconut cream sauce better so I made this special sauce for you to try!
Ingredients:
- 4 cups glutinuous flour
- 1 1/2 cup water
- 1/4 cup granulated sugar
- 2 cups grated coconut
For the sauce and coconut sugar mixture:
- 1 (14 oz) coconut cream
- 3/4 cup brown sugar
- 1/4 cup sesame seeds
- 2 cups freshly grated coconut
- 1/2 cup granulated sugar
Directions:
- Bring a large pot of water to a boil.
- In a bowl, add the glutinuous flour and 1 cup of water. Mix until combine.
- Add the remaining half cup of water, one tablespoon at a time until the dough is firm enough to be molded. If you added too much water, just add more flour one tablespoon at a time.
- Make a golf ball sized ball. Then flatten with your palm. Add to the boiling water one by one.
- The dough is ready when it floats.
- Transfer the palitaw to a plate. Set aside.
To make the sauce:
- In a pot, add the coconut cream and brown sugar. Stir until the sugar is dissolved.
- Add one tablespoon of sesame seeds. Simmer for 15 minutes. Watch it carefully as it can overflow when it boils.
- Add about 10 pieces of palitaw to the sauce.
- Simmer for about 5 minutes.
- Serve while warm.
For the second method:
- In a bowl, mix together the grated coconut and sugar.
- Add the remaining sesame seeds. Mix to combine.
- Roll the palitaw onto the coconut mixture on both sides.
- Serve while warm. Great with a cup of tea!
