Palitaw

Its been a while since I made this and when I do, it doesn’t last long. So when my husband saw me making these he hurried eating his dinner, so he can eat it😁 Classic palitaw is rolled in coconut sugar mixture, but we like the coconut cream sauce better so I made this special sauce for you to try!

Ingredients:

  • 4 cups glutinuous flour
  • 1 1/2 cup water
  • 1/4 cup granulated sugar
  • 2 cups grated coconut

For the sauce and coconut sugar mixture:

  • 1 (14 oz) coconut cream
  • 3/4 cup brown sugar
  • 1/4 cup sesame seeds
  • 2 cups freshly grated coconut
  • 1/2 cup granulated sugar

Directions:

  1. Bring a large pot of water to a boil.
  2. In a bowl, add the glutinuous flour and 1 cup of water. Mix until combine.
  3. Add the remaining half cup of water, one tablespoon at a time until the dough is firm enough to be molded. If you added too much water, just add more flour one tablespoon at a time.
  4. Make a golf ball sized ball. Then flatten with your palm. Add to the boiling water one by one.
  5. The dough is ready when it floats.
  6. Transfer the palitaw to a plate. Set aside.

To make the sauce:

  1. In a pot, add the coconut cream and brown sugar. Stir until the sugar is dissolved.
  2. Add one tablespoon of sesame seeds. Simmer for 15 minutes. Watch it carefully as it can overflow when it boils.
  3. Add about 10 pieces of palitaw to the sauce.
  4. Simmer for about 5 minutes.
  5. Serve while warm.

For the second method:

  1. In a bowl, mix together the grated coconut and sugar.
  2. Add the remaining sesame seeds. Mix to combine.
  3. Roll the palitaw onto the coconut mixture on both sides.
  4. Serve while warm. Great with a cup of tea!
