These muffins are moist and scrumptious. The combination of peach and white chocolate complements each other and the streusels on top makes it even better!
Ingredients:
- 2 1/4 cups flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cup sugar
- 1/2 cup oil
- 1 cup milk
- 2 eggs
- 1 tsp almond extract
- 1 cup peaches in can, chopped
- 1/2 cup white chocolate chips
Directions:
- In a bowl, mix and sift flour, baking powder, salt and sugar together.
- In a mixer bowl, add the oil, milk, eggs and vanilla extract. Mix until combined.
- Add in the flour mixture and mix just until combined. Don’t overmix or the muffin will be tough.
- Add the peaches and white chocolate. Fold gently until combined.
- Spray the muffin liner with oil. Add about 1/3 full on each liner.
- Add the streusel on top.
- Bake at 375 degrees for 15 to 20 minutes or until a toothpick inserted comes out dry.
- Serve while warm!
To make the Streusel:
Ingredients:
- 1 cup flour
- 1 cup granulated sugar
- 6 tbsp cold unsalted butter, cut into chunks
Directions:
- In a medium bowl, combine flour and sugar.
- Add the cold butter and mix with a fork until resembles coarse crumbs.
- You can add a dash of cinnamon for flavor if you prefer.
Note:
You can use other combination like lemon blueberries or pear and candied ginger.
