Spicy Tofu with Cauliflower Rice

Go light and healthy with this 100% vegan dish! This dish is packed with good plant based protein and fiber. The tofu is fried until crispy then smothered in tangy spicy sauce (which by the way is to die for!) after which it’s served with a bed of sauteed cauliflowers! This is one of THE best vegetarian dish I had so far! And if you want to lick the bowl, go ahead I won’t judge😋😉

Ingredients:

For the cauliflower rice:

  • 1 head of cauliflower, chopped
  • 2 tbsp butter
  • 1 tbsp dried parsley
  • Salt
  • Pepper

For the Crispy tofu:

  • 1 pack firm tofu
  • 1 cup cornstarch or potato starch
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Canola oil, for deep frying

For the spicy sauce:

  • 2 tbsp butter
  • 2 tsp grated ginger
  • 1 clove garlic, grated
  • 2 tbsp sambal or gochuchang
  • 1 tbsp teriyaki sauce (I used homemade)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp black vinegar
  • 3 tsp sesame oil
  • 3 tbsp brown sugar
  • 1/3 cup water
  • 1 tbsp cornstarch
  • Chives or green onion, chopped

Directions:

To make the cauliflower rice:

  1. Place the chopped cauliflower in a food processor. Pulse until you reached the consistency of rice.
  2. In a heated pan, add butter and parsley. Saute for a few minutes.
  3. Add the caulifllower and saute just until its half cooked. It should take around 5 to 10 minutes depending on the size of your pan. Don’t overcook it or it will become mushy!
  4. Transfer into a plate and keep warm.

To make the crispy tofu:

  1. In a bowl, add the cornstarch, pepper, and salt. Mix together.
  2. Cut the tofu into bite sized pieces .
  3. Dredge each piece in the corntarch mixture.
  4. Deep fry until light brown and crispy for about 5 to 10 minutes. Set aside.

To make the spicy sauce:

  1. In a heated pan add butter, garlic and ginger. Saute until the garlic is soft about two minutes.
  2. Add the sambal, teriyaki sauce, rice vinegar, black vinegar, sesame oil, brown sugar, and water. Stir.
  3. Simmer for about 3 minutes.
  4. Add the cornstarch dissolved in 2 tbsp of water. Stir continuously while adding the cornstarch.
  5. Add the fried tofu and tossed together until combined. Make sure all the tofu is covered with sauce.
  6. Serve the tofu on top of the cauliflower rice and top with chopped green onions. Yum!

Note:

You can also add toasted peanut or almonds for some crunch. If your allergic to nuts, you can add some toasted sesame seeds instead!
