Pork is yet another variation of sinigang (sour soup). Of all the sinigang variation, this is my favorite! You can either use neck bones or pork ribs.
Ingredients:
- 2 lbs pork bones, (neckbones or ribs)
- 1/4 cup butter
- 1 medium sized red or yellow onions
- 3 Roma tomatoes, quartered
- 1 small piece ginger
- 2 cups water
- 4 pcs taro root, peeled and cut into chunks
- 1 banana peppers
- Bunch of spinach leaves
- 2 tbsp sinigang mix
Directions:
- In a heated pot, add the butter and saute the onions, tomatoes and ginger.
- Add the pork and saute for a few more minutes.
- Add the water, taro roots, and banana pepper. Bring to a boil and simmer for an hour or until the pork is tender.
- When the meat is tender add the spinach leaves then turn off the heat. The heat will cook the spinach.
- Serve with steam rice and serve while warm.
