Potato Salad

I’ve added my own twist to potato salad and made it sweeter! The addition of pineapple chunks make it unique and are sure to surprise anyone you serve it to. Try it out!

Ingredients:

  • 3 lbs red potatoes
  • 1 1/2 cup mayonnaise
  • 1 1/2 cup pineapple chunks
  • 1/3 cup pickle relish
  • 1 tbsp honey dijon mustard
  • 1/4 tsp white pepper
  • 1/2 tsp salt

Directions:

  1. In a large pot, add the potatoes, two teaspoon salt, and water. Boil the potatoes until tender. Let cool.
  2. Peel the potatoes and chop into bite-sized.
  3. Transfer into a big bowl and add the rest of the ingredients.
  4. Adjust the seasoning according to your preference.
  5. Place in the fridge for 30 minutes to develop the flavor.
