Fresh seaweed was always available back home in the Philippines. Being that it was so cheap and abundant, I often used it for salads! Ever since I moved to the U.S., I’ve missed making it. Substituting dried seaweed has gotten me very close in this recipe; try it out!
Ingredients:
- 1 cup dried seaweed
- 3 Roma tomatoes, finely chopped
- 1/2 cup red onions, finely chopped
- Juice of half lemon
- salt and pepper
- sugar
Directions:
- Place the dried seaweed in bowl with water and let it soak until it doubles in size.
- Wash and drain the seaweed.
- In a separate bowl, mix the chopped tomatoes, chopped onions, and lemon juice.
- Add the seaweed. Mix until combined.
- Season the salad with the salt, pepper and sugar (go easy on the sugar!) as desired.
- Serve it as a side, or if possible, with some broiled or fried fish!
