Seaweed Salad

Fresh seaweed was always available back home in the Philippines. Being that it was so cheap and abundant, I often used it for salads! Ever since I moved to the U.S., I’ve missed making it. Substituting dried seaweed has gotten me very close in this recipe; try it out!

Ingredients:

  • 1 cup dried seaweed
  • 3 Roma tomatoes, finely chopped
  • 1/2 cup red onions, finely chopped
  • Juice of half lemon
  • salt and pepper
  • sugar

Directions:

  1. Place the dried seaweed in bowl with water and let it soak until it doubles in size.
  2. Wash and drain the seaweed.
  3. In a separate bowl, mix the chopped tomatoes, chopped onions, and lemon juice.
  4. Add the seaweed. Mix until combined.
  5. Season the salad with the salt, pepper and sugar (go easy on the sugar!) as desired.
  6. Serve it as a side, or if possible, with some broiled or fried fish!
